Impressed by the dining experience and sharing the same cooking philosophy as Mott 32, Pierre Hermé has in collaboration with Mott 32’s culinary team, exclusively designed his first ever exclusive mooncakes, turning a traditional Mid-Autumn Festival gift into a delectable work of art.
Together with Mott 32’s culinary team, Pierre Hermé came all the way to Hong Kong and worked together, challenging the standards of tastes and innovating techniques to create perfect ingredient pairings, testing various combinations and spices such as cumin, cinnamon, almond, jasmine, kumquat and even exploring the potential of using duck fat to replace butter as an ingredient to create something truly unique. “The entire process is quite challenging but fun, as I am trying to adapt Chinese ingredients in pasty-making, this is absolutely something new and unique that no one has tasted before,” says Pierre Hermé.
These refined creations have used ingredients that are sourced from the best producers and regions to create harmonic and delicate flavour combinations and the results are quite something. Sold in a set of four, each mooncake is topped with a thin layer of different coloured chocolate coating, exquisite to both the eye and palate.
