EXECUTIVE CHEF ALAN JI, MOTT 32 LAS VEGAS

In 2009, Chef Alan began his career as part of the opening culinary team for Hakkasan in Miami, which was later named one of the top 10 restaurants in the city. He continued to climb the ranks within the Michelin-starred Hakkasan family over the next few years in New York and Las Vegas before becoming executive chef at the Beverly Hills outpost in 2014.

In 2016, Chef Alan joined the Wing Lei team at Wynn Las Vegas as Chef de Cuisine. During his tenure, Wing Lei was awarded a Forbes Travel Guide Five-Star Award two years in a row, making it the only Chinese restaurant in North America to hold this prestigious honor.

Chef Alan Ji is the Executive Chef of Mott 32 Las Vegas.

Culinary Director Malcolm Wood and Chef Lee of Hong Kong have teamed up to create the Mott 32 menu with their combined years of experience. Malcolm Wood spent his younger years living in Taiwan before moving to Hong Kong and has always been passionate about the traditional recipes of Chinese home cooking that have been passed down through generations. This proved a winning combination with Chef Lee’s talent for producing some of  Hong Kong’s favourite dishes.

Chef Lee takes pride in understanding each ingredient as he adapts a contemporary approach when recreating authentic Chinese cuisine by sourcing fresh ingredients. “I usually source fresh ingredients from sustainable producers to maintain the quality of the food from both local and overseas suppliers “ says Chef Lee. The menu at Mott 32 perfectly illustrates Chef Lee Man Sing’s masterful skills in creating authentic Chinese dishes.

Chef Lee is a highly respected and well-known Cantonese chef who built his reputation at the prestigious Man Wah restaurant in Hong Kong’s flagship Mandarin Oriental hotel. During his time there, his fine Cantonese cuisine and gastronomic menu earned the restaurant two Michelin stars as well as numerous accolades from the Hong Kong Tourism Board, including the “Best of the Best Culinary Award” in 2006 and 2009. He was also appointed as a member of the Hong Kong Chinese Chefs Association and served on the judging panel for HOFEX, Asia’s leading food and hospitality tradeshow.
