The kitchen at Mott 32 is helmed by Group Chinese Executive Chef Lee Man Sing.

Chef Lee is a highly respected and well-known Cantonese chef who built his reputation at the prestigious Man Wah restaurant in Hong Kong’s flagship Mandarin Oriental hotel. During his time there, his fine Cantonese cuisine and gastronomic menu earned the restaurant two Michelin stars as well as numerous accolades from the Hong Kong Tourism Board, including the “Best of the Best Culinary Award” in 2006 and 2009. He was also appointed as a member of the Hong Kong Chinese Chefs Association and served on the judging panel for HOFEX, Asia’s leading food and hospitality tradeshow.

Chef Lee has brought his years of experience and expertise to bear on Mott 32’s menu, conceived with the help of Maximal Concepts’ Culinary Director Malcolm Wood.

Malcolm Wood spent his younger years living in Taiwan before moving to Hong Kong in his teenage years. His lifelong passion for traditional Chinese home-cooking recipes proved to be a winning trait when combined with Chef Lee’s talent for producing some of Hong Kong’s favourite dishes, resulting in a refined yet flavourful menu bolstered by a keen focus on the provenance of its ingredients. Chef Lee takes special pride in understanding each ingredient used in Mott 32’s menu, adopting a contemporary approach to recreating authentic Chinese cuisine by sourcing only the freshest ingredients from sustainable producers. Through these measures, Chef Lee is able to maintain the high quality of his dishes and provide guests at Mott 32 a truly exceptional dining experience.
